HEREDAD MONTSARRA CATALUNYA, SPAIN

A medieval Catalan farmhouse in the town of Torroelles de Foix is the origin of Heredad Montsarra, a well-known vineyard founded in 1857 in Alt Penedes. The property consists of 99 acres of grapes. The vineyards of the Montsarra are situated at an altitude between 250–310 meters above sea level, and are protected against the wind by the mountains of La Llacuna. The soil is calcareous. The annual temperature ranges from 82°F in July to 37°F in January. The grapes, which are native to the region, are carefully selected from the Montsarra vineyard in the Penedes region of Spain. Using the Traditional Method Champénoise, the three varieties are combined to create a base wine to which sugar and yeast are added. This base wine then undergoes a slow, second fermentation in the depth of the cellars on the Montsarra estate. The cellar conditions, constant temperature and protection from light are optimal for the creation of this excellent, unique cava.
